This super green pasta with watercress pesto is utterly divine, not just with its vibrant beautiful colors but the taste too. This is once again a super simple recipe, that is healthy and packed full of vitamins. The watercress pesto adds a wonderful little bite and is a nice change to the traditional basil pesto, whilst the peas and asparagus embrace the springtime. Watercress Pesto

  • 2 cups of watercress, washed and stems removed
  • 1 cup of fresh english spinach leaves
  • 1/4 cup of hemp seeds
  • 2 tblsp. pine nuts, toasted
  • 2 cloves of garlic
  • 1/3 cup of olive oil
  • Juice from half a lemon
  • Pinch of sea salt
  • Pinch of  ground black pepper

Combine all ingredients in a food processor and pulse until a smooth consistency is reached. Store in a glass jar in the refrigerator.

Green Pasta 

  • 400 grams of spaghetti, you can use gluten free or really any type of pasta you love for this recipe
  • 1 cup of fresh peas, shelled
  • 1 bunch of green asparagus, chopped
  • Pinch of sea salt
  • Ground black pepper
  • Olive oil

Bring a large pot of water to the boil and salt it generously. Once it has boiled, add the spaghetti. Make sure you stir it intermittently throughout the cooking time which will be approximately 8 – 10 minutes or until the pasta is al dente. Rinse and drain well.

In a small pot, bring 2 cups of water to the boil, add a very small pinch of salt and then add the peas, cook for about 2 – 4 minutes. Remove from the heat and run some cold water over them.

In a large pan on medium heat add a splash of olive oil, once it is warm add the chopped asparagus spears, a small pinch of salt and some ground black pepper. Roast in the pan for approximately 5 minutes or until slightly golden, then add the fresh peas, cooked pasta and a generous amount of watercress pesto. Toss around in the pan until everything is well mixed and generously coated in pesto.

Serve the pasta on a plate and top it off with a grating of fresh lemon zest, a sprinkle of chili flakes and a generous dollop of goats curd.

For the omnivores...

Pork Lardons (serves 1)

  • 100 grams lardons
  • Olive oil

Heat a small splash of olive oil in a frying pan and sizzle the lardons for about 5 mins until they are crisp. Serve on top of the above super green pasta.
