This summery heirloom tomato salad is bursting with colors and wonderfully intense flavors. The star of this salad is the sun ripened heirloom tomatoes that need not much else than a touch of seasoning added to create a simple but oh so delicious light and flavorsome summer salad. We recently spent a gorgeous weekend in the French countryside at my partners parents house, where we picked these beautiful organic heirloom tomatoes direct from the garden. This salad is perfect as a side with summer BBQ’s or a quick and easy lunch, served with a good crusty baguette. Guaranteed to satisfy vegans, vegetarians and omnivores alike.
Serves 4
Summery Heirloom Tomato Salad
- 6 medium sized assorted heirloom tomatoes, halved and sliced into wedges
- 1 golden shallot, finely chopped
- 1 clove of garlic, finely chopped
- 1 teaspoon of balsamic vinegar
- 2 tblsp. of olive oil
- A good pinch of sea salt
- Pinch of ground black pepper
- 4 tblsp. of fresh basil, roughly torn
- 3 tblsp. of fresh mint, finely chopped
In a small bowl combine the shallot, garlic, olive oil, vinegar, sea salt and pepper and combine well. Set aside. In a medium salad bowl gently combine the cut tomatoes, basil and mint. Now drizzle generously with the vinaigrette. Serve straight away.
Note: The types of tomatoes that I used for this recipe were – Green Zebra, Brandywine, Beefsteak, Woodle Orange and Cherokee Purple.
