A refreshing summer salad that celebrates the wonderful watermelon. Summer watermelon salad with dill & mint is quick to prepare, delicious to eat and best of all, helps beat the summer heat. A great salad to bring to parties or picnics and a delicious way to serve watermelon in a savoury sense.

Summer Watermelon Salad w/Dill & Mint

  • 700 grams of fresh seedless watermelon, cut into 1cm cubes
  • 1/2 large red onion, halved and finely sliced
  • 200grams of feta cheese
  • 1/3 cup of fresh dill, finely shopped
  • 1/3 cup of Fresh mint, roughly chopped
  • Pinch of sea salt
  • Pinch of fresh ground black pepper
  • A drizzle of good quality olive oil

Remove the skin from the watermelon and chop the flesh into 1cm cubes.

Peel and finely slice the red onion, crumble the feta, pick and tear the mint leaves and finely chop the dill.

Place all of the ingredients into a bowl and gently combine. Drizzle over a little olive oil and season with the salt and black pepper.
