Sesame soba noodle salad with asparagus ribbons is a light and refreshing salad thats perfect for warm summer days. Super simple to prepare, delicious to eat and great for picnics and satisfying large crowds. This salad has bold asian flavors and I have used the Japanese buckwheat noodles, soba noodles, which are excellent chilled down and eaten cold. A salad that is guaranteed to please everyone from vegans and vegetarians to omnivores alike.

Sesame Soba Noodle Salad with Asparagus Ribbons

  • 500 grams of soba noodles*
  • 2 tblsp. of fresh ginger, finely grated
  • 1 1/2 tblsp. of garlic, finely grated
  • 4 tblsp. of soy sauce
  • 4 tblsp. of mirin
  • 2 fresh limes, juiced
  • 3 tblsp. of sesame oil
  • 2 tblsp of white sesame seeds, toasted
  • 2 tblsp. of black sesame seeds
  • 2 mild red chillies, finely sliced
  • 6 spring onions, finely sliced
  • 1 bunch of asparagus, shaved into ribbons (I use my vegetable peeler for this)
  • 3 medium carrots, peeled and julienned
  • 4 tblsp. of fresh coriander, finely chopped

In a large pot, fill with enough water to cover the soba noodles and bring to the boil, then add the noodles. Cook the soba noodles according to the instructions on the package, generally this is approximately 5 minutes. Drain and rinse immediately with cold tap water. Make sure you rinse them throughly, so they are not too starchy. Drain the cooled noodles and set aside.

In a medium sized bowl add the ginger, garlic, soy sauce, mirin, lime juice, sesame oil, red chillies and sesame seeds. Whisk all ingredients together to combine well.

Now in a large salad bowl add the soba noodles, spring onions, coriander, julienned carrots and asparagus ribbons and drizzle the dressing over the salad. Gently combine well, cover and chill down in the fridge before serving.

*Soba noodles are traditional Japanese noodles made with buckwheat flour. You can buy soba noodles at most asian supermarkets and you can also buy them gluten free but do be sure to buy the 100% buckwheat variety, as sometimes they are blended with wheat flour.
