Juicy Blueberry Crumble Squares are the cheeky dessert go too in our house! These squares are super, super, super simple to make .The crumble bakes off crunchy, golden & delicious whilst the base is similar to a shortbread biscuit. The gorgeous, juicy blueberry mix in the centre brings it all together with a hint of tart and a slightly saucey consistency. You can serve them cooled down & cut into little squares, or scoop it out of the dish piping hot straight from the oven, ready to be paired with a good vanilla ice-cream (if you’re feeling overly decadent).

Juicy Blueberry Crumble Squares

Base and Crumble 

  • 3/4 cup of raw sugar
  • 1/4 cup of brown sugar
  • 3 cups of plain flour
  • 1 tsp. of baking powder
  • 1/4 tsp. of sea salt
  • 225 grams of butter, chilled and cubed
  • 1 large egg
  • 1 vanilla pod

Blueberry Filling

  • 1/2 cup of raw sugar
  • 4 tsp. of arrowroot powder
  • 4 cups of fresh or frozen blueberries
  • Juice of 1 orange


Preheat oven to 180°C. Grease and line a baking dish 30 x 20 cm.

In a medium sized bowl, add the sugar, flour, seeds from the vanilla pod, sea salt & baking powder. Using your fingertips, rub the cubes of butter into mix until it resembles breadcrumbs.

Make a well in the centre of the mix and add the egg, combine the mixture well. It will seem a little crumbly but thats ok. Now divide the mixture and place half into the base of your greased baking dish. Press the mixture evenly and firmly down to create the base of the squares.

In another medium sized bowl add all of the ingredients for the blueberry filing. Gently toss together until evenly coated. Now spread the mixture evenly on top of the  base you have just prepared.

Crumble the reserved half of topping you set aside earlier, on top of the blueberries & bake for 50 – 60 minutes or until the top is nice and golden and the blueberry mix is bubbling slightly.

Remove from the oven and set aside to cool before cutting into squares. Alternatively you can scoop immediately out of the oven and serve with a side of vanilla ice cream or fresh cream.

These squares are perfect stored in the freezer for up to two weeks in an airtight container too.
