Grilled Shishito Peppers are probably one of my favourite tapas snacks to share with friends over drinks! If you have spent time in Portugal or Spain, you are probably familiar with their local variety of a very similar grilled green pepper. But these are the wonderful Japanese ones and are a member of the capsicum family. The shishito pepper is sweet, delicious and a little peppery in taste! Perfect to grill, super simple to prepare and even better when shared and enjoyed over a cold drink……

  • 3 tblsp. of olive oil
  • Coarse sea salt, to serve

In a bowl, toss the peppers with the olive oil.

Heat a cast iron grill pan over high heat until hot. Add the peppers to the preheated grill pan. Grill the peppers, tossing occasionally, until the skin is lightly blistered and charred on all sides, 3 to 5 minutes.

Transfer to a serving plate and season generously with salt. Serve immediately with a cold refreshment.
