Fennel and orange salad with white miso dressing  is a gorgeous fresh and peppery salad perfectly light for the warmer weather. This salad makes a great side dish with many mains, from tofu and vegetables to different types of meats and fish. The combination of the orange in the salad is a match made in heaven for the white miso dressing and the pepperiness of the watercress and radish compliment the sweetness of the fruit. Super simple to make and a nice change to other salads, this salad is a winner for vegans, vegetarians and omnivores alike.

Fennel Salad

  • 1 medium fennel, shaved
  • 2 small oranges, peeled, pith removed and sliced into small segments
  • 1 small red onion, finely sliced
  • 1/2 bunch of fresh watercress
  • 1 handful of lambs lettuce
  • 8 small red radishes, shaved
  • 100 grams of snow peas, blanched
  • 60 grams of toasted pecans

Place all of the ingredients into a medium sized salad bowl, and toss together gently. Serve drizzled with the white miso dressing (recipe below).

White Miso Dressing

  • 1 clove of garlic
  • 1 tblsp. of white miso paste
  • 2 tblsp. of rice vinegar
  • 1 tblsp. of mirin
  • 1 tblsp. of olive oil
  • 4 tblsp. of fresh orange juice
  • 2 teaspoons of agave syrup
  • 1/2 teaspoon of sesame oil
  • A small pinch of sea salt

Place all ingredients into a blender and blend until well combined. The dressing can be stored in a glass jar in the fridge for up to a week.
