Christmas Spiced Shortbread Cookies
- 225 grams of salted butter, softened
- 3/4 cup of caster sugar
- 2 cups of plain flour, sifted
- 1/4 cup of corn flour, sifted
- 1 1/2 teaspoons of all spice mix, sifted into the flour
Preheat oven to 160°C. In a medium sized mixing bowl, cream the butter and sugar together with an electric beater until pale in color and creamy.
Next, add the sifted flours and spice to the butter mixture and use a wooden spoon to stir until just combined. Turn on to a lightly floured surface and gently knead until the dough forms a smooth ball.
Line two baking trays with baking paper. In between two other sheets of baking paper, place the dough and with a rolling pin, roll the dough out to a 1cm thick rectangle. Use a 7cm-diameter star-shaped pastry cutter to cut out stars.
Place the cut stars onto the lined trays and put in the freezer for 20 minutes. This helps the dough not to spread when baking. Then just before baking sprinkle the cookies with raw sugar.
Place the cookies into the oven and bake for 20 minutes or until lightly golden. Remove from oven and set aside on trays to cool.
Note: I use a spice mix from Albert Ménes and it is made with the following spices; cinnamon, cloves, nutmeg, chili, cardamon and ginger. I love this particular spice blend as it smells just divine and festive, and is really well balanced. But feel free to use any of your favorite all spice mixes here.
