Chocolate Truffle Protein Balls

  • 30 fresh dates, seeds removed
  • 1/2 cup of raw almonds
  • 1/2 cup of LSA*
  • 2 tblsp. of raw cacao powder
  • 2 tblsp. of hemp seeds
  • Pinch of sea salt
  • 1 tblsp. coconut oil, melted
  • 1 tblsp. brown rice syrup (you can also use agave or maple syrup in the same quantities)
  • Extra cacao powder for sprinkling

Place the dates, almonds, LSA, cacao, hemp seeds, salt, brown rice syrup & oil in a food processor. Process for 2–3 minutes or until the nuts are finely chopped and the mixture comes together.

Now roll into tablespoon sized balls. Note the mixture may look a bit dry but once you compact it nicely into the balls it will come together. The warmth of your hands helps this process.

Once you have finished rolling all the mixture into balls, refrigerate until ready to serve and then dust lightly with extra cacao powder.

*LSA is a blend of linseeds, sunflower and almonds and is very high in protein and omega-3 fatty acids. You can easily buy it at your local grocery or health food store.
