A wonderfully satisfying and heart warming mid week meal that takes no time to put together and will satisfy everyone. I promise the omnivores out there will not miss the meat with this hearty dish.

A Bowl of Sunshine: Creamy Polenta, Sweet Potato & Leeks with Romesco Sauce

Creamy Polenta

  • 2 1/2 cups of water
  • 2 cups of milk
  • 1 cup of polenta
  • 75 grams of parmesan cheese, finely grated
  • 25 grams of butter
  • 1 clove of garlic, minced
  • 1 teaspoon of fresh thyme, finely chopped
  • A generous pinch of sea salt
  • Pinch of ground black pepper

In a medium sized saucepan, bring the water and milk to a boil, add the salt, pepper, thyme and garlic. Now, gradually add the polenta and continually whisk for a few minutes until the polenta is smooth and not lumpy.

Continue to cook the polenta on low heat for a further 30 minutes, whisking frequently. Turn off the heat and add the cheese and butter and extra seasoning if you think it needs it. Set aside covered with a lid.

Sweet Potato and Leeks

  • 1 large sweet potato, cut into small cubes
  • 3 tblsp. of olive oil
  • 2 large leeks, finely sliced
  • 2 teaspoons of fresh rosemary, finely chopped
  • 1 clove of garlic, finely chopped
  • 2 tblsp. of dried cranberries
  • Pinch of sea salt
  • Pinch of ground black pepper
  • 2 cups of fresh rocket (for serving)
  • 200 grams of soft goats cheese (for serving)

In a large frying pan add the olive oil and heat over medium/high heat, add the sweet potato and fry for 20 minutes or until the cubes are golden, crispy and soft in the centre.

Now add the leeks, rosemary, garlic, cranberries, salt and pepper. Cook all together for a further 10 minutes on medium heat or until the leeks are nice and soft.

To assemble your bowl of sunshine, place a portion of the polenta in the bowl, then a handful of rocket followed by a good scoop of the sweet potato and leeks mix and top with a good dollop of romesco sauce and some crumbled goats cheese and a sprinkle of chilli flakes if you like.
